Cookie dough you can eat for… breakfast?

Yes, this is that! It’s wholesome, gluten-free, and easy to throw together.

Ingredients

This recipe is made with five simple ingredients:

Dates

Nondairy milk (we prefer soy)

Oat flour (we use gluten free)

Vanilla extract

Chocolate chips (check out these for a stevia-sweetened option!)

This easy cookie dough is meant to be eaten for breakfast!

Equipment

  • Food processor

Ingredients

  • 1 cup medjool or deglet noor dates
  • 1/3 cup nondairy milk
  • 1 cup oat flour
  • 1 tsp vanilla extract
  • 1/4 cup mini chocolate chips

Instructions

  • Add the dates and nondairy milk to a small saucepan or skillet over medium heat. Continuously stir the dates and milk until the dates soften and the milk begins to simmer. If the milk starts to boil, bring the heat down.

  • Once the dates are softened, allow the mixture to cool for a few minutes then add to a food processor and process until smooth. Add the oat flour and vanilla and process until a batter forms.

  • Place the batter in the fridge or freezer and allow to cool.

  • Mix in the chocolate chips.

  • Done! This is meant to be eaten as-is with a spoon. Store in an air-tight container in the fridge or freezer.

    This was delicious. I played around with the recipe and replaced half a cup of the oat flour with cooked garbanzo bean. It was really cool to make this as the base recipe and then play around with different toppings when you served it to make different cookie flavors, like peanut/almond butter, or some kind of coffee powder.

    Can you use all purpose flour?

      Don’t use all purpose flour because it is not pasteurized. That’s why it’s nothing safe to eat raw cookie dough. It’s not because of the egg.

    Yours taste Amazing!!! I wasn’t into the cookie dough with the chickpeas Because it still taste like chickpeas cookie dough! Please email me your easy breezy recipes because I’m not cook. I just eat porridge and potatoes every day. I love my porridge because I have carrots and apples and banana blended and taste like a treat. That’s why I transition to a plant-based lifestyle because I only like dessert and I have to Lose a ton of weight. Mind you it was easy for me because I’ve hated animal proteins my entire life but I was forced to eat it. The word vegan did not exist when I was young

    I substituted almond flour for the oat (hubby’s preference) and sweetened carob chips for the chocolate. I used Halawi dates (from Nuts.com). The dates were so fresh and soft that when I heated the almond milk with them in it I only needed to whisk the mix (no processor needed). Most excellent! Thank you for the recipe.

    I totaled the calorie/protein/fiber for this–the recipe makes 3 servings:
    calories: 351
    protein: 6
    fiber: 6
    (I would add a scoop or two of protein powder
